Mirin

Mirin is a rice wine, similar to sake but with less alcohol and made with 50% sugar. It’s used to sweeten your dishes, improve the fragrance, and give to give a shiny appearance.

Miso Paste

A savoury paste made from fermented soybeans. It can be used to give some dishes a meaty taste. Known for it’s use in soups, it’s also popularly used in sauces and salad dressings.

Dashi

A hugely popular stock, commonly made with edible kelp and katsuobushi (preserved, fermented skipjack tuna). It’s used as the base for many soups, sauces, and simmering liquids. You can also make your own.

Soy Sauce

Also popular in the West, Soy Sauce is made from a fermented paste of boiled soybeans, roasted grain, brine, and a special yeast mould. Great for seasoning while cooking or at the table.
